Hello, everyone! Happy Sunday! I hope you have had a chance to relax and enjoy this weekend! As many of you are aware, last week MVP Generation Go’s ambassadors and I shared some of our favorite healthy recipes!

Sari also provided us with one of her very own favorite “tea”-licious recipes:
Tiny Tots Tea Room Fruit Parfait Dessert (Makes 5-6 servings)
- One box Jell-O instant white chocolate pudding
- 1 1/2 cup skim or 1% milk
- FRESH Strawberries, Grapes, Cantaloupe, Watermelon, & Cherries
- Cool whip or redi whip
- Honey Bunches Just Bunches Cereal (or your favorite granola)
Prepare fruit prior to the kids wanting to have dessert. It’s always a great idea to keep fresh fruit cut as a grab and go snack in the fridge. Don’t cut the pieces too small or too big; try to make them easy bites for your little ones. Halve the grapes as well as the cherries (after pitting them first!). Mix the pudding in Tupperware and set it in the fridge for a minimum of 10 minutes. When it’s time to prepare and eat dessert, give the kids a portion-controlled cup. Large bowls are fun to fill, but not the best for little tummies. Six to 8 oz. plastic cups work well and are disposable, too. Have the little ones place a mix of fruit on the bottom, with a dollop of pudding, then some granola, and repeat the layers to the top of the cup. Place a dollop of cool whip on top, followed by a cherry, and it’s ready to eat!
BREAKFAST OPTION! Replace pudding with vanilla or strawberry yogurt. The serving size should be a bit larger when serving for breakfast, as this is a nutrition need to start the day.

This week’s Kids Fun Plaza winner is Katie Kiffney! Katie is a mommy of twin boys and she shared one of her favorite recipes that she likes to make for her family–it sounds really yummy!
- 1 pound frozen or fresh bay scallops (or substitute shrimp)
- 1/2 package fresh spinach
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 can diced tomatoes
- 1 can tomato paste
- minced garlic (to taste- usually 1-2 tbsp)
- salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 1/2 pound spaghetti
Saute garlic in olive oil for about 1-2 minutes (do not burn). Add spinach and lemon juice. Saute spinach until wilted. Add diced tomatoes and tomato paste. Cook for about 5 minutes until flavors are blended and sauce is warm. Add scallops or shrimp and cook only until done (about 3-5 minutes, depending on stove temperature). Serve over spaghetti or angel hair with Parmesan cheese. This makes about four servings!

This week we want everyone from all over to share what kind of creative recreational activities you do with your family! Creative recreation is recognized in every culture of the world as a critical component of growth and development. No doubt about it: play is important for promoting capabilities and social awareness within children. Since play is often accompanied by physical activity, it also deals with your child’s movements and physical fitness.
We want to start discussions and to share some ideas and thoughts with other parents! One of my favorite things to do is run! I live in a small town that has a local bike trail that is fairly close to my house. I like to wake up really early and start my route through the village, then head to the bike trail to finish. I really enjoy running because it keeps me strong and healthy, plus I love how I feel once I am done! The nice thing about running is that I can go by myself or I can get my family involved also!
